Unfortunately to change the pin you would need to know your current pin. If you do you can change it by going into Settings - Security & Privacy - Change Passcode.

Yes to Facebook, YouTube is now back on Fire devices as an app so that is fine ,Instagram is possible but needs to be side loaded , This is not an Android device , is Fire OS which is a version of Android, You can install playstore and access many apps .
