My wife bought me the first two books for my birthday and we have used them every other day since getting them. This new book starts off just where the others finished, with simple, quick dishes that anyone can make and enjoy without fuss in a roasting tin. There is so much variety and whether you are a vegan, vegetarian or a meat lover; there is something for everyone.
I particularly enjoyed the quick chicken, leek and chorizo pie and the orzo giardiniera this week.
I like that a lot of the ingredients are used in many of the dishes so you won't find yourself buying an ingredient and it becoming stuck in the cupboard until you make the same dish again (or not if you didn't enjoy it!).
Rukmini's books are clear and concise and are now my go-to books for all the cooking in our household.
If anyone can recommend similar books which are just as quick and easy as the meals here, I would be very interested!

Recipes are clearly listed, instructions are clear and the ingredients can be easily found at regular supermarkets.
The dishes we've tried so far had great flavor and were genuinely easy to produce, even on a busy week day evening when there isn't so much time.
I wish I had more books like this.
Cannot recommend this, or any of the other Roasting Tin books enough.
While this is a lovely, well-produced cookbook from an imaginative author, this book is not any of these things I’m afraid. It:
- usually needs a trip to the supermarket for fresh, low shelf-life ingredients either on the day or very near it (I’m not “on the way home” to pick anything up!)
- very often needs the carbs cooked or made in a separate pan on the stove/fresh crusty bread. It’s often not the “one pan meal” I was looking forward to learning about, it’s a “one pan dish, to serve with sides”
- often has a lot of cheese or cream or oil/butter going in, without any idea given of how many cals per portion this is
- most recipes are veggie or vegan, with no omnivore alternative suggested at all for these
- when there is meat, often reliant on chicken or pork rather than less intensively produced grass-fed local lamb or beef, which I would argue we need to choose more of, if omnivore and trying to be more environmentally conscious.
This is a nice book, I just personally won’t be able to use it much without a 45-minute round trip to the supermarket every 2-3 days, sometimes an eye on the stove for 15-20 mins and a major overhaul of most of the recipes.
Review made to help others choose, since there is not a recipe sample list to illustrate the realities, not made to criticise the author.
