Gill Meller’s new book Outside is a thoughtful celebration of the joys of cooking and eating outdoors. We shouldn’t be shutting doors any more – we should be opening them...
From his rural home overlooking the sea, Gill is perfectly placed to write about open-air cooking, whether it's a simple campfire on the beach or a barbecue in the garden, evoking pictures of summery platters on laden tables, and slow, gentle picnics in fields.
With more people than ever staying at home for their holidays, taking the family camping or walking, as well as meeting friends for picnics and barbecues, it feels like people have rediscovered their love of the outdoors. Gill’s cooking is, as always, inspired by the changing seasons and encourages us to reconnect with nature and the world around us through the food we eat. So whether you want a bowl of something hearty and warming on a wintry walk, or crave something bright, fresh and zesty to enjoy by the coast in the sunshine, there are recipes to delight everyone, wherever they are.

This new publication is an inspiring and encouraging addition to my Gill Meller collection. As ever, the recipes and the exquisite photography grab one's attention, interest and motivation from the outset. Recipes, ingredients, method are , as ever, constructed in characteristically straightforward and uncomplicated style, garnished with nuggets of charming observations and reflections. The book went straight into action on the day it arrived, flatbreads with chilli and fennel sausage, burrata and herbs gave me an excuse to dry out and fire up the barbecue. The bashed cucumber salad, as with so many of Gill's creations, gave this year's prolific harvest of garden herbs, new purpose. The chickens have been advised to get their act together in order to support this evening's 'late spring salad', with asparagus, new potatoes and eggs. I also need to go check on whether the expanse of wild garlic in the wood is still fit for consumption so that I can fit in a few other recipes before we go away to Sweden for a month. In fact, the most important task is to go and weigh the luggage and take out whatever necessary to enable me to take 'Outside' with me - a remote island in the archipelago is going to be a fantastic test-bed for beach-based cooking of fish and foraged greens - I might just try to slip in a baked potato or two!! Thanks Gill.
His first being quite possibly my all time favourite of an extensive collection, this one is definitely fighting for first place too.
I have always adored cooking outside, it's a terribly fun way to cook ones meal, and this book is packed with recipes that I just want to make . Pictured was his glorious Blue Cheese Celery Salad, which has become a week night staple in my household. Buy this immediately!

This is one of those books to curl up with and read from cover to cover before it soon gets stained from use.
The photography is gorgeous and the writing is friendly and informative.
As an ardent hater of a boring BBQ, this book will definitely see me outside cooking this Summer and into the Autumn and Winter too. This is most definitely NOT a summer only BBQ book so please don't cross it off your list if planning Christmas presents as this really is a book for all seasons.
However, since receiving this book on publication day I have not only been inspired to give outdoor/fire cooking a go, but I have already built my first fire and have already made a couple of the recipes from this book: fire baked wet garlic, and onions cooked on coals, which I baked in the coals of my outdoor fire whilst a gorgeous pork chop was gently cooked on the grate.
'Outside' is a magnificent book, not only through how it looks (the photography by Andrew Montgomery is stunning), but the content is inspirational in spades: Gills way with words makes reading the book a joy, and the stories he tells around each and every recipe in the book immediately makes you want to drop all worldly tasks and build a campfire! I have a LOT of recipes left to cook from 'Outside' but I can tell that this is going to be a book that will be by my side for the long term, an outdoor cooking companion....of sorts!
Bravo Gill, this is a superb book, thank you for inspiring me to get outside and explore outdoor cooking.
